Recipe Ingrdients
  • 3 tablespoons red curry paste
  • Zest of 1 kaffir lime (or about 4 leaves shredded)
  • 1 400ml can coconut cream
  • 2 eggs
  • Handful of Thai basil (the one that smells like aniseed)
  • 500g white saltwater fish
  • A few prawns if you like
  • Fish sauce
  • A knob of galangal
  • 1 kaffir lime zest
  • About 4 banana leaves cleaned

Recipe Instructions

Get some rice going. Step 2 Cut the banana leaves in (approx) 6 inch circles, and fold four sides and secure with half toothpicks (as shown in the picture). Step 3 Place half the fish, galangal, egg, 3/4 coconut milk, and kaffir lime zest in a blender and blend until smooth. Step 4 Place a few of the basil leaves on the bottom of the baskets, then cover with equal amounts of fish and prawns. Lastly, add some coconut cream on top and garnish with basil and some kaffir lime leaf shreds. Step 5 Pour the mixture over the fish and prawns until well covered. Step 6 Place baskets in a steamer and steam for around 15 minutes.
