Get some rice going. Step 2 Cut the banana leaves in (approx) 6 inch circles, and fold four sides and secure with half toothpicks (as shown in the picture). Step 3 Place half the fish, galangal, egg, 3/4 coconut milk, and kaffir lime zest in a blender and blend until smooth. Step 4 Place a few of the basil leaves on the bottom of the baskets, then cover with equal amounts of fish and prawns. Lastly, add some coconut cream on top and garnish with basil and some kaffir lime leaf shreds. Step 5 Pour the mixture over the fish and prawns until well covered. Step 6 Place baskets in a steamer and steam for around 15 minutes.
